Based in the Aÿ region of Champagne, Ayala has been producing Grand Crus from Chardonnay grapes since 1860.

Launched by Edmond de Ayala, by 1908 Ayala was granted a Royal Warrant in Great Britain, as the wine grew in popularity. In the 1920s, the house was enjoying its golden age, producing one million bottles annually.

In 2005, Ayala was bought by the Bollinger family, which equipped the house with a modern vinification tool and introduced a new leadership team, eventually leading to a new-look label design in 2014.

The wines are created using a minimalist dosage thanks to an extended ageing period. The house ages the wines for six, 12 years or longer.
