Marea Dubai unveils experimental new tasting menu

DIFC restaurant will serve a ten-course supper designed to present a new perspective on Italian ingredients

It might be best known for its coastal Italian cuisine, but Marea Dubai’s newest menu has been designed to make diners think afresh about the country’s most recognisable ingredients.

Chef Yunus Emre Aydin’s ten-course tasting menu aims to take a more creative approach to traditional Italian flavour pairings, as demonstrated in an opening dish entitled ‘Margharita’. Served in a pizza box, the dish takes the ingredients of a classic pizza but presents them in a very different way.

Further courses run from burnt marrow tartare, prepared tableside and served as a pani puri, and ‘Flaked Alaska’, a savoury course pairing king crab with fermented grape jus, apple, fennel, chive oil and basil.

‘Root’ uses celeriac for a fresh take on local favourite, shawarma, while ‘Magenta’ will take the form of a bright pink fregola risotto, inspired by aged balsamic – and Pantone’s colour of the year.

“The ethos of Marea has always been about quality dining,” explains Panchali Mahendra, president of Atelier House Hospitality, the group behind Marea Dubai. “With this new tasting menu, we are excited to showcase a progressive aspect of Chef Yunus’s creativity, propelling it into an elevated dining experience.” 

The menu will be available to a limited number of diners from Tuesday to Saturday, priced at AED590 per person.
