The first annual Gault&Millau UAE gala was a celebration of gastronomic successes in more ways than one.
The room of 200 of the UAE’s very best chefs, sommeliers and restaurateurs saw the first-ever Gault&Millau UAE awards and ratings being announced at Burj Al Arab’s Al Falak Ballroom.
But the ceremony also saw an exquisite five-course menu created and presented by chefs Saverio Sbaragli of Al Muntaha and Andrea Migliaccio of Al Mahara’s Ristorante L’Olivo pop-up at Burj Al Arab Jumeirah.
The menu was paired with fine wines and champagne from African + Eastern.
The esteemed chefs and their teams prepared 1,000 intricate dishes, which were served over the course of the night to the 200 guests.
The Gault&Millau Gala 2022 menu
The prestigious menu for the Gault&Millau 2022 Gala began with a caprese salad made with cream of mozzarella di buffala, tomato foam, and toasted focaccia, topped with basil oil.

The second course was comprised of Mediterranean blue lobster, summer pumpkin, and Sicilian blood orange with tarragon Kristal caviar from Kaviari.

Saffron risotto flavoured with pure crocus with caramelised chicken oysters followed the lobster course.

The risotto was followed by veal fillet mignon with rosemary ash and juniper and asparagus tart on the side.

The meal ended with ‘Il Latte’, a desert of caramelised biscuit, dulce de leche and a goat cheese emulsion.
